Black beans are not only nutritious, they are also oh so delicious!
They are classified as a legume, but did you know they are actually a seed from the plant on which they grow (Ware, 2018)? Black beans are packed with fiber, protein, and iron; and they have some of the highest levels of magnesium and vitamin A compared to other commonly consumed beans. The best part is that they are some of the tastiest with a sweeter texture and fit very well is most Mexican and Tex-Mex dishes.
One of our staples for a quick and summery meal is a Southwest Salad in which you can use as many black beans as you like (remember, a serving size is ½ cup). Below is a list of ingredients we enjoy, but you can always add in extras that you like. Simply start with a base of any kind of lettuce (we enjoy a good spring mix), and then chop up some of these tasty delights to add on top:
Why stop there? Kick your meal up a notch by whipping up a quick and delicious vinaigrette. Just mix the ingredients in a jar, shake it up, and pour it on! All you need on hand is olive oil, apple cider vinegar, a lime (or lime juice), chili powder, oregano, cumin, garlic powder, and salt.
